Which Coldsnap creature rises above all the others and stands as king of the creature hill?
What do you think are the best 5 Coldsnap creatures, and why?

quite obviously ohran viper is number 1 creature.
i havent been through the full spoiler but white pump kinght, rinewand dragon and zur all deserve a mention

Ohran Viper is by far the best creature, and likely the best card to come out of Coldsnap. It will be a format defining card for its entire run. It is Ophidian, one of the most defining cards of its time, but better in every respect.
I would have to say that creature number 2 is the Vexing Sphinx. This card is a deceptive powerhouse, with little to no realistic drawback if played correctly. It is incredible in a defensive capacity, and will be an excellent aggro creature in the right deck. This card will also see lots of play in extended in threshold decks where it is definitely the nuts. Discard Anger 1st upkeep, anyone? How about Wonder?
The others I am not so sure about, but Zur will see play, and with Timespiral may become a decent deck unto himself. The pump knights will be solid for their entire run, just like every other WW or BB knightly critter has been. The Valkyrie will likely see play the moment Kamigawa block rotates to replace Yosei/Keiga in control decks without SSS.

1. ohran viper(nuff said)
2. vexing sphinx(hidden power house...i like to think of it as psyonic blast that draws you 2 cards
3. haakon(could make a really powerful aggro deck based around him)
4. lightning serpent(another new ball lightning, but this one can be faster, bigger, and easier to cast
5. martyr of sands(my God you can gain an insane amount of life with her on turn 2)

The viper is amazing, but what about Adarkar Valkyrie!!! Haven't you people actually looked at this card? it's insane!!!!

The Valkyrie can indeed be insane in some decks that are built to abuse her. It is number 2 in my list, immediately after Ohran Viper whose reign as best creature of the set is undisputable.
The list is completed by Lightning Serpent (for now at least, as I don't really see a deck being able to take advantage of it yet), Haakon (I think will be broken) and the pump knights.
The rest of the big creatures are good for limited, but cannot possible survive in a Standard format which features the best removal spells in a long time and Wrath of God to boot.

3)lightning serpent w/ seething song its a ball lightning
4)vexing sphinx beatdown and card draw
5)sheltering ancient sideboard only, but it'll wreck tron and magnivore decks.

Hmmm...it's a tough call. I suspect that the Rimescale Dragon is ripe for abuse. It is a completely insane bomb in limited, and seems constructed-worthy. I think my list looks like:
1 - Haakon
2 - Rimescale Dragon
3 - Ohran Viper
4 - Stalking Yeti (again, added here for limited prowess)
5 - Blizzard Specter
Honorable mentions: Adakar Valkerie, Darien King of Kjeldor, Joton Owl-keeper, Ronom Unicorn, Jump Knights.

Honestly, the Dragon may see play but a 5/5 for seven mana even if its a flyer isn't all that great. Neither are the Ball Lightning or White Knight/Black Knight variants. Lightning Serpent is worse that Ball Lightning at 3 mana, Blistering Firecat at four mana, and even Spark Elemental. However, late game it can basically be a Blaze on a stick, and trample makes sure it can get enough damage through.
If the Crusaders had one more toughness or even gave extra toughness with the pump, it would be good. Flying helps, but its a weak replacement for the Hands once they leave Standard.
Haakon clearly will see play in some form of Knight deck, and it should be pretty hard to deal with (see the price of Leyline of the Void jump).
Adarkar Valkerie will make a version close to Kami Blocks White Weenie become viable, as you can save your best creature.
The 1WW that gives first strike and Glorious Anthem would see play only if it didn't only do it for Soldiers.
The Wolverine thats a fixed Mogg Fanatic I can see getting played, but with so much removal its impact will be minimal.
So heres the top 5 in no particular order.

Haakon
Adarkar Valkyrie
Ronom Unicorn - Kami of the Ancient Law is one of the best utility creatures in the current Standard... There is no way that the Unicorn will disappoint.
