So...do pokeblocks raise only the cosmetic stuff (cool, beauty...) Has anyone noticed any change in their pokemon's (thats recieving the blocks) Attack/Deffense/ Specials...and so on?
No, Poke'Blocks are simply to help with contests, I believe. There's also a limit to how many a single pokemon can eat. Here's some nice links from Serebii.
------------------------------------------------------------------------
PokeBlocks. (http://www.serebii.net/pokemon_advance/pokeblocks.shtml)
-This tells you all the different PokeBlock colors and what stats they raise.
PokeBlock flavor preference. (http://www.serebii.net/pokemon_advance/nature-taste.shtml)
-Tells you which PokeBlocks certain pokemon natures like and dislike. For example: A pokemon with a lonely nature likes spicy PokeBlocks, but dislikes sour PokeBlocks.
BerryDex. (http://www.serebii.net/berrydex/%5B/url)
-Just for a berry refrence.
Contests. (http://www.serebii.net/games/contest.shtml)
Just for some info on Pokemon Contests.
--------------------------------------------------------------------------
Hope this helps.

As stated above, when your Pokemon simply says it cannot eat anymore, it cant. It is like feeding a baby in real life, once they are stuffed, they cant eat anymore. :D
Having the inability to eat anymore was a safety mechanism the game developers worked into the game, otherwise you would be able to fill up all elements for contexts (beauty, cool, smart etc) and get instant high appeal from the crowd, its like EVs in a sense, to stop everyone having over powerful pokémon they worked in that you could only get certain levels of stats.

cool, that makes sense. But what if lets say a pokemon is entering a Cool contest, and It has other attributes raised up as well. Will it get more votes in the primary round due to that?
As far as I remember you will get some but not full amount... hmmm haven't done contests in ages... can't help there..
